Noodles are everywhere. Every country has their favorite type – made of wheat, rice, soy. I love them so much I can eat them everyday even as a sweet treat. Here’s one of my favorite noodle puddings – no slurping required!

Peachy Noodle Pudding

  • 1 8-ounce package egg noodles
  • 2 eggs, beaten
  • 1/4 cup granulated sugar
  • 12-ounce jar peach preserves
  • 1 cup sour cream
  • 1/2 cup cottage cheese
  • 1/2 cup golden raisins
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • Prepare egg noodles according to package instructions and drain. In a large bowl, mix eggs and sugar. Add the noodles, preserves, sour cream, cottage cheese, raisins, and butter and blend well. Pour into a greased 13 x 9-inch baking dish. Bake at 350 degrees F. until brown and crisp on top.
