Vanilla is still America’s leading ice cream flavor. I love it because it blends so well with so many flavors. As we head into berry season, enjoy this quick to make pie that will have everyone thinking you slaved in the kitchen.

Vanilla Berry Ice Cream Pie

  • 1 quart vanilla ice cream, slightly softened
  • 1 (9-inch) chocolate-cookie pie crust or graham-cracker pie crust
  • 1/3 cup chocolate syrup
  • 2 tablespoons toasted almonds, chopped
  • 1 1/2 cups blueberries
  • 1 1/2 cups raspberries
  • 1 1/2 cups blackberries
  • 2 tablespoons water
  • 2 tablespoons brown sugar
  • Spoon ice cream into crust; smooth top. Squeeze chocolate syrup in a decorative pattern over ice cream. Sprinkle with almonds; freeze until firm. Can be made 1 day ahead; keep frozen. Let pie soften slightly as you make berry sauce. In a medium saucepan, bring all berries, 2 tablespoons water, and brown sugar to simmer. Cook until sauce thickens, stirring gently, about 4 minutes; remove from heat. Cut pie into wedges; place on plates. Spoon warm sauce over.
