26 Recipes = 26 Laundry Stains: Quick Molasses Bran Muffins

I’ve loved the Muffin Man for many, many years. Just like this photo, I could be a member of Muffins Around the World. Try this recipe if you love the flavor of gingerbread. These muffins freeze well so you can keep them on hand.

Quick Molasses Bran Muffins

  • 3/4 cup milk
  • 1 1/2 cups whole bran cereal
  • 1 egg
  • 1/2 cup vegetable oil
  • 1/3 cup molasses
  • 1 1/4 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • Heat oven to 400 degrees F. Prepare 12 medium muffin cups. Pour milk over bran cereal, let stand 1 minutes. Stir in egg, oil and molasses. Add remaining ingredients, stirring just until flour is moistened. Batter will be lumpy. Fill muffin cups about 3/4 full and bake about 20 minutes. Remove from pan and serve. Makes 12.
