There is nothing better than a meal prepared on the outside grill because that means no pots and pans to wash. These kebabs are simple and very flavorful even if you dribble a bit of grease on your t-shirt!

Pork and Potato Kebabs

  • 1 pound pork tenderloin, cut in 1-inch cubes
  • 4 potatoes, cut in 1-inch cubes
  • 2 tablespoons fresh rosemary leaves, chopped
  • 3 tablespoons
  • 1/2 lemon, juiced
  • Cook the potatoes in boiling salted water for 5-8 minutes until barely tender. Drain well. Thread the pork alternately with the potatoes on to 8 skewers. Mix the chopped rosemary, olive oil and lemon juice together and season with salt and pepper. Brush the marinade over the pork and potatoes. Grill on lightly oiled grill rack for 14 minutes, turning once and brushing again halfway through grilling. Serve with lemon wedges.
