You all know by now that I’m a Southern girl and we love our goobers or peanuts. Give me a jar of peanut butter and a spoon and I’m happy. So, of course, I love this pie. Add some sweetened whipped cream and you have some good eatin’!

Peanut Butter Pie

  • 2/3 cup sugar
  • 1/2 teaspoon salt
  • 1 cup dark corn syrup
  • 1/3 cup creamy peanut butter
  • 3 eggs
  • 1 cup salted peanuts, chopped
  • 1 9-inch unbaked pastry crust
  • Heat oven to 375 degrees F. In a mixing bowl, beat sugar, salt, corn syrup, peanut butter and eggs. Stir in peanuts. Pour into pastry crust. Bake about 40 to 50 minutes until crust is golden brown, center will still be soft. Cool and refrigerate. Serve with whipped cream or ice cream.
