Ice Cream! Ice Cream! We all scream for Ice Cream! Homemade ice cream is one of my favorite treats. I remember as we progressed from a hand-cranked churn to an electric one. The hardest part was waiting for the ice cream to harden off. I’ll admit, most of the time we ate it as a soft serve!

With today’s machines, ice cream can be made easily and quickly. I’m sharing one of my favorites – Peanut Brittle Ice Cream.

Peanut Brittle Ice Cream

  • 1 cup milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 3 egg yolks, beaten
  • 1 tablespoon vanilla
  • 2 cups chilled whipping cream
  • 1 cup crushed peanut brittle
  • Mix milk, sugar, salt and egg yolks in saucepan. Cook over medium heat, stirring constantly, just until bubbles appear around the edges. Cool to room temperature. Stir in vanilla, cream and brittle. Freeze according to ice cream maker’s directions.
