26 Recipes = 26 Laundry Stains: Crab Deviled Eggs

Deviled eggs are always a favorite on our table. But when I want to make them extra special I add fresh crab. Unless you are a tidy eater, wear something yellow or learn how to get the stains out!

Crab Deviled Eggs

  • 12 hard-cooked eggs, shelled and cut in half lengthwise
  • 1/4 cup mayonnaise
  • 1/4 cup cream cheese, softened
  • 1 tablespoon yellow mustard
  • 1 tablespoon lemon juice
  • 1/2 stalk celery, finely minced
  • 2 spring onions, finely minced
  • 1/2 pound lump crab meat with no shells!
  • Salt and pepper to taste. Remove the yolks from the whites and place in a medium mixing bowl. Mash the yolks into small pieces. Add the mayonnaise, cream cheese, mustard, lemon juice, celery and onions. Mix well and stir in crab meat. Season the mixture with salt and pepper.Spoon the mixture into the egg white halves. Chill the eggs completely and garnish with additional spring onion bits or parsley or sprinkle with paprika.
