26 Recipes = 26 Laundry Stains: Brandied Cherry Doughnut Pudding

I seldom have the problem of leftover doughnuts. Remember, I live in Krispy Kreme country and they are best eaten hot right off the glazing line. But on those rare occasions that I splurge on several boxes of doughnuts from the JROTC’s latest fundraiser, here’s a great recipe for leftovers:

Brandied Cherry Doughnut Pudding

  • 2 dozen day-old glazed doughnuts
  • 1 cup dried cherries
  • 1/2 cup brandy
  • 2 eggs, lightly beaten
  • 1 can evaporated milk
  • 1 cup half and half
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1 cup slivered almonds
  • 4 tablespoons butter, melted
  • Heat oven to 350 degrees. In a small bowl, pour brandy over dried cherries and set aside. Butter 13”x 9” baking dish. In a large bowl, whisk eggs and add milks. Stir in almond flavoring, salt, and nuts. Tear doughnuts into small pieces one-inch pieces. Add doughnuts, butter and brandied cherries. Pour into baking dish and allow to set for about 15 minutes.
